How to make it

  • Cut spaghetti squash in half and scoop out insides.
  • Lightly brush with olive oil and sprinkle with Kosher salt and crushed black pepper.
  • Put about 2-3 pads of butter in each side of the squash
  • Place face up on baking pan (put about 1/4 inch of water at bottom of pan. Cover with foil tent and bake for 45 minutes at 425
  • Sauce
  • In a saucepan melt 1/2 stick of butter with 1-2 tbs of olive oil and 1 tbs of minced garlic. Add cream sherry, heavy cream, and spinach.. Simmer for 10 minutes or so. You may want to add more heavy cream or more cream sherry (up to you). You can thicken by simmering for longer or adding a gravy thickner if you like.
  • When the squash is done take a fork and scrape each side. It's going to be hot so use an oven mit or wait a little while for it to cool.
  • When you scrape it with a fork it's going to come out like long strands of spaghetti. Scrape it right into the saucepan and toss with the sauce. Add the freshly grated parmesan reggiano and serve. It's actually pretty easy to make and really good. You can use regular spaghetti if you like.
