How to make it

  • Heat a pot or a deep skillet over medium high heat.
  • Add olive oil, season chicken with salt and pepper, brown chicken pieces on both sides.
  • Add the other ingredients to the pan, bring to a boil and then simmer for 35 minutes. (You need enough chicken broth or water to just cover the chicken.)
  • Remove chicken and mushrooms and boil to concentrate the flavor.
  • You can thicken this with some flour if you like or add some cream to the broth to make a richer sauce.
