Don't know whether the late Sen. Richard Russell (D-Ga.) cooked these potatoes or just ate 'em, but they sure are good.

Ingredients
  • 3 cups mashed sweet potatoes
  • 1 cup sugar
  • 2 eggs
  • 1 tablespoon vanilla
  • 1/2 cup melted butter
  • Topping:
  • 1 cup brown sugar
  • 1/2 cup flour
  • 1 cup chopped nuts
  • 1/3 cup butter

Directions
  1. Mix mashed potatoes, sugar, eggs, vanilla and 1/2 cup butter and pour into greased 1 quart casserole.
  2. Mix topping ingredients and sprinkle on top.
  3. Bake at 350 for 30 minutes.
