How to make it

  • pre heat oven to 180c or 160c for fan forced.Grease and line a 210cm round cake pan
  • whisk together sugar,eggs,oil,yoghurt and lemon rind. fold in flour and salt,then stir in lemon juice.pour into prepared tin and bake for 45 minutes until a skewer comes out clean.
  • cool in pan for 5 min. Turn out onto a wire rack to cool. serve with icing sugar and cream.
