this cake is one of my favorite it's light and fluffy and very moist i hope u love it as much as me

Ingredients
  • 13/4 cups (385g) caster sugar
  • 2 eggs
  • 1 cup(250ml)rice bran oil
  • 1cup(280g) plain yoghurt
  • grated rind of 2 lemons
  • 2cups(300g) self-raising flour
  • 3tbsp of lemon juice
  • 1/2tsp salt
  • icing sugar for dusting
  • thick cream for serving

Directions
  1. pre heat oven to 180c or 160c for fan forced.Grease and line a 210cm round cake pan
  2. whisk together sugar,eggs,oil,yoghurt and lemon rind. fold in flour and salt,then stir in lemon juice.pour into prepared tin and bake for 45 minutes until a skewer comes out clean.
  3. cool in pan for 5 min. Turn out onto a wire rack to cool. serve with icing sugar and cream.
