lemon yoghurt cake

- 13/4 cups (385g) caster sugar shopping list
- 2 eggs shopping list
- 1 cup(250ml)rice bran oil shopping list
- 1cup(280g) plain yoghurt shopping list
- grated rind of 2 lemons shopping list
- 2cups(300g) self-raising flour shopping list
- 3tbsp of lemon juice shopping list
- 1/2tsp salt shopping list
- icing sugar for dusting shopping list
- thick cream for serving shopping list
How to make it
- pre heat oven to 180c or 160c for fan forced.Grease and line a 210cm round cake pan
- whisk together sugar,eggs,oil,yoghurt and lemon rind. fold in flour and salt,then stir in lemon juice.pour into prepared tin and bake for 45 minutes until a skewer comes out clean.
- cool in pan for 5 min. Turn out onto a wire rack to cool. serve with icing sugar and cream.
