Barbecued Trout

- 8 trout shopping list
- fresh herb springs to garnish shopping list
- lemon wedges to garnish shopping list
- Marinade: shopping list
- 1/3 cup plain yogurt shopping list
- 1/2 teaspoon hot pepper sauce shopping list
- 1/2 teaspoon cayenne pepper shopping list
- 1 tablespoon tomato paste shopping list
- 1/4 cup sherry shopping list
- 1/2 teaspoon salt shopping list
- 1/4 teaspoon freshly ground black pepper shopping list
- 1 teaspoon superfine sugar shopping list
- 1 tablespoons plus 1 teaspoon chopped fresh basil leaves shopping list
- 2 teaspoons chopped fresh chives shopping list
- 2 teaspoons finely grated lemon peel shopping list
How to make it
- Wash and clean fish then remove heads and dry well on paper towels.
- To prepare marinade combine all marinade ingredients until evenly blended.
- Pour into large dish then add fish 1 at a time and turn fish gently in marinade to coat evenly.
- Cover and refrigerate 2 hours then prepare a hot barbecue.
- Cook fish quickly over hot heat turning once about 6 minutes or until crisp.
- Brush with more marinade if necessary then garnish with herb sprigs and lemon wedges.
