Summer Salad With Honeymustard Dressing Recipe

A delicious salad for summer that can accompany barbecued meat or fish

Ingredients
- 1 bunch of rocket
- 3 tomatoes
- 1 tsp mustard
- 1 tsp honey
- 2 tbs olive oil
- salt and pepper (to taste)
- some fresh basil leaves
- some fresh oregano leaves
- 2 tbs pine nuts
- 2 tbs sunflower nuts
- zest of 1 lemon (or lime)
- 2 tbs grated kefalotiri or parmezzano
Directions
- Heat the honey for a little while to thin it.
- Mix well with the mustard and olive oil.
- Cut the rocket by hand, cut slices of tomatoes on top, add the dried nuts, aromatic herbs and lemon zest.
- Sprinkle with the grated cheese, salt and pepper.
- Pour the sauce over and serve.

@pink, indeed rocket is a type of lettuce in English, also called arugula or rucola even roka in Greek.
