Sweet Potato Pecan Casserole

- 4 large sweet potatoes OR shopping list
- 2 23 oz. sweet potatoes canned and drained shopping list
- 1 stick butter, softened shopping list
- 1 eggs shopping list
- 1/2 tsp vanilla shopping list
- 1/2 tsp nutmeg shopping list
- 1/2 tsp cloves shopping list
- 1/2 tsp cinnamon shopping list
- 1/2 tsp allspice shopping list
- 1/2 cup brown sugar (firmly packed) shopping list
- 1 5 oz. evaporated milk (can) shopping list
- dash salt shopping list
- TOPPING shopping list
- 1 cup brown sugar (not firmly packed) shopping list
- 1 cup pecans, chopped shopping list
- 1/2 cup flour (all-purpose) shopping list
- 1/2 stick butter, melted shopping list
How to make it
- Cook, drain and mash sweet potatoes OR drain the canned sweet potatoes. Heat and mash. Add all ingredients (except TOPPING ingredients) and mix well. Pour into casserole dish sprayed with cooking spray.
- TOPPING - Mix brown sugar and flour together. Then mix in the pecans. Add the melted butter last. (Usually looks "crumbly.")
- Spread topping over the casserole and bake in 350 degree oven for 25-30 minutes.
