Pattis Lemon Meringue Pie

- 3 cups sugar shopping list
- 6 Tablespoons cornstarch shopping list
- 6 Tablespoons all-purpose flour shopping list
- 1/4 Teaspoon salt shopping list
- 3 Cups hot water shopping list
- 6 slightly beaten egg yolks/ save egg whites for meringue shopping list
- 4 Tablespoons butter shopping list
- 1 Teaspoon grated lemon peel shopping list
- 2/3 cup lemon juice (fresh squeezed) shopping list
- MERINGUE: shopping list
- 6 egg whites shopping list
- 1 Teaspoon vanilla shopping list
- 1/2 Teaspoon cream of tartar shopping list
- 8 Tablespoons sugar shopping list
- CRUST: shopping list
- 1 1/2 packages graham crackers (crushed) shopping list
- 9 Tablespoons melted butter shopping list
- 1/3 cup sugar shopping list
How to make it
- Mix crushed graham crackers, melted butter, and sugar in a bowl.
- Press into 9 x 13 pan
- Bake at 350 degrees for 10 - 15 minutes. Let cool
- In saucepan, mix sugar, cornstarch, flour and salt.
- Gradually add hot water, stirring constantly
- Cook and stir over moderately high heat until mixture comes to a boil.
- Reduce heat; cook and stir 2 minutes longer
- Remove from heat.
- Stir 1/3 of the mixture into egg yolks (to temper), then return to hot mixture.
- Bring to a boil and cook 2 minutes, stirring constantly.
- Add butter and lemon peel.
- Slowly add lemon juice, mixing well.
- Pour over graham cracker crust.
- Meringue:
- Beat eggwhites with vanilla and cream of tartar until soft peaks form.
- Gradually add sugar, beating until stiff and glossy peaks form and all sugar is disolved
- Spread meringue over filling; seal to edge
- Bake at 350 degrees 15 to 20 minutes or until meringue is golden brown.
- Cool before cutting
