How to make it

  • Mix crushed graham crackers, melted butter, and sugar in a bowl.
  • Press into 9 x 13 pan
  • Bake at 350 degrees for 10 - 15 minutes. Let cool
  • In saucepan, mix sugar, cornstarch, flour and salt.
  • Gradually add hot water, stirring constantly
  • Cook and stir over moderately high heat until mixture comes to a boil.
  • Reduce heat; cook and stir 2 minutes longer
  • Remove from heat.
  • Stir 1/3 of the mixture into egg yolks (to temper), then return to hot mixture.
  • Bring to a boil and cook 2 minutes, stirring constantly.
  • Add butter and lemon peel.
  • Slowly add lemon juice, mixing well.
  • Pour over graham cracker crust.
  • Meringue:
  • Beat eggwhites with vanilla and cream of tartar until soft peaks form.
  • Gradually add sugar, beating until stiff and glossy peaks form and all sugar is disolved
  • Spread meringue over filling; seal to edge
  • Bake at 350 degrees 15 to 20 minutes or until meringue is golden brown.
  • Cool before cutting
