Ingredients
  • 1 (11 ounce) can Mexican-style corn
  • 1 (16 ounce) can chili beans
  • 2 (14.5 ounce) cans chicken broth
  • 1 (16 ounce) jar chunky salsa
  • 2 1/2 cups cooked turkey, chopped
  • Salt and pepper to taste
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup sour cream
  • 2 tablespoons guacamole

Directions
  1. Combine corn, chili beans, broth and salsa in a large pot over medium heat.
  2. Bring to a boil.
  3. Reduce heat.
  4. Stir in cooked turkey.
  5. Season with salt and pepper.
  6. Cover.
  7. Simmer 10 minutes more OR until heated through.
  8. Stir in cilantro.
  9. Stir together the sour cream and guacamole in a bowl until smooth.
  10. Remove soup from heat.
  11. Ladle into bowls.
  12. Top with guacamole mixture.
