How to make it

  • Put the quinoa in a wire strainer and thoroughly rinse with hot water to remove any bitter flavor.
  • In a medium saucepan, bring the water and quinoa to a boil over high heat. Reduce the heat to low, cover, and simmer until the quinoa is tender and the water is absorbed, 10 to 12 minutes. Let cool completely.
  • In a small bowl, whisk the lemon juice, oil, garlic, salt
  • In your salad bowl, mix the tomatoes, onions, zucchini, raisins, cranberries, sunflower seeds, walnuts, cilantro and mint with the quinoa.
  • Pour the dressing over the quinoa mixture and toss gently to mix.
  • Cover and refrigerate for at least 30 minutes to 1 hour before serving.
  • This salad is even better made the day before. Great for dinner, parties, or pot luck
  • Feel free to replace the zucchini with cucumbers sub any of the dried fruits with the ones you like and do the same with the nuts.
