How to make it

  • Brine the Chicken for about 3 hours with the slices of orange and a lot of salt
  • Hang and let air dry for about an hour
  • Mix all the above ingredients except for the potatoes and the thickly sliced onions in a food processor
  • Rub the marinade over and inside the chicken as in between the flesh and the skin
  • Put it in a pan and stick it in the fridge.. let marinate and air dry overnight
  • Put it in your baking pan
  • Largely cube the potatoes and mix them with the onions
  • Arrange them around the chicken and stick it in your preheated oven ( 400 degrees F)
  • Lower the temperature to 325 and cook for a good 45 mins
  • Stick a fork in the thigh and see if the juices runs clear
  • Cool for 5 mins before serving with lemon (optional), Rice and peas or bread
  • * Serve with a severely chilled bottle of Prosecco, it helps to cut the spice a bit
  • I have this contraption from the 1940's that keeps the chicken standing while im baking it.. Ideally you would use a wood fired grill to cook it.. but my tiny fireplace grill is not powerful enough too cook a whole chicken completely.. if you have a outdoor grill then please go ahead and use it.. a rotisiere on the grill would be ideal as well. Authentic Jerk Chicken is cooked covered with planks and green branches while being cooked outdoors.
