Jamaica is one of my favourite places, and not for the reasons you are thinking :).. In anycase, the best Jerk Chicken i have ever had is in Negril, on the 7 mile beach in this thatched shack right next to Hotel Kuyaba.. Wonderful!

Ingredients
  • 1 1/2 Pound Chicken ( you can use a bigger one for the family)
  • 2 tbs of All spice freshly ground ( freshly ground is the key)
  • 4 cloves of garlic
  • 3 whole scallions chopped
  • 2 tbs of fresh Thyme
  • 1 inch stick of Cinnamon
  • 1/2 tsp of ground nutmeg
  • 2 tbs of brown sugar
  • 1 tsp black peppercorns
  • 1 Fresh Lime juice
  • 1/2 tbs of nutmeg
  • 2 scotch bonnet peppers ( de-seeded) add more if you like it hot hot hot.
  • 2 black cloves
  • 1 orange
  • salt to taste
  • 5 Potatoes
  • 2 onions thickly cut

Directions
  1. Brine the Chicken for about 3 hours with the slices of orange and a lot of salt
  2. Hang and let air dry for about an hour
  3. Mix all the above ingredients except for the potatoes and the thickly sliced onions in a food processor
  4. Rub the marinade over and inside the chicken as in between the flesh and the skin
  5. Put it in a pan and stick it in the fridge.. let marinate and air dry overnight
  6. Put it in your baking pan
  7. Largely cube the potatoes and mix them with the onions
  8. Arrange them around the chicken and stick it in your preheated oven ( 400 degrees F)
  9. Lower the temperature to 325 and cook for a good 45 mins
  10. Stick a fork in the thigh and see if the juices runs clear
  11. Cool for 5 mins before serving with lemon (optional), Rice and peas or bread
  12. * Serve with a severely chilled bottle of Prosecco, it helps to cut the spice a bit
  13. I have this contraption from the 1940's that keeps the chicken standing while im baking it.. Ideally you would use a wood fired grill to cook it.. but my tiny fireplace grill is not powerful enough too cook a whole chicken completely.. if you have a outdoor grill then please go ahead and use it.. a rotisiere on the grill would be ideal as well. Authentic Jerk Chicken is cooked covered with planks and green branches while being cooked outdoors.
