Jamaican Jerk Chicken

- 1 1/2 Pound chicken ( you can use a bigger one for the family) shopping list
- 2 tbs of All spice freshly ground ( freshly ground is the key) shopping list
- 4 cloves of garlic shopping list
- 3 whole scallions chopped shopping list
- 2 tbs of fresh thyme shopping list
- 1 inch stick of cinnamon shopping list
- 1/2 tsp of ground nutmeg shopping list
- 2 tbs of brown sugar shopping list
- 1 tsp black peppercorns shopping list
- 1 fresh lime juice shopping list
- 1/2 tbs of nutmeg shopping list
- 2 scotch bonnet peppers ( de-seeded) add more if you like it hot hot hot. shopping list
- 2 black cloves shopping list
- 1 orange shopping list
- salt to taste shopping list
- 5 potatoes shopping list
- 2 onions thickly cut shopping list
How to make it
- Brine the Chicken for about 3 hours with the slices of orange and a lot of salt
- Hang and let air dry for about an hour
- Mix all the above ingredients except for the potatoes and the thickly sliced onions in a food processor
- Rub the marinade over and inside the chicken as in between the flesh and the skin
- Put it in a pan and stick it in the fridge.. let marinate and air dry overnight
- Put it in your baking pan
- Largely cube the potatoes and mix them with the onions
- Arrange them around the chicken and stick it in your preheated oven ( 400 degrees F)
- Lower the temperature to 325 and cook for a good 45 mins
- Stick a fork in the thigh and see if the juices runs clear
- Cool for 5 mins before serving with lemon (optional), Rice and peas or bread
- * Serve with a severely chilled bottle of Prosecco, it helps to cut the spice a bit
- I have this contraption from the 1940's that keeps the chicken standing while im baking it.. Ideally you would use a wood fired grill to cook it.. but my tiny fireplace grill is not powerful enough too cook a whole chicken completely.. if you have a outdoor grill then please go ahead and use it.. a rotisiere on the grill would be ideal as well. Authentic Jerk Chicken is cooked covered with planks and green branches while being cooked outdoors.
