This recipe originally called for Grand Marnier but I thought Limoncello might just work as well. This dough is best used in "logs".

Ingredients
  • 4 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 tablespoon cracked black pepper
  • 1/2 teaspoon salt
  • 1 1/2 cups sugar
  • 2 stick unsalted butter, room temperature
  • 2 tablespoons Grand Marnier OR Limoncello
  • 1 1/2 tablespoons lemon zest
  • 2 teaspoons vanilla extract
  • 4 large eggs

Directions
  1. Mix together flour, baking powder, pepper and salt.
  2. Beat butter and sugar together until fluffy.
  3. Beat in Grand Marnier/limoncello, vanilla extract and lemon zest
  4. Beat in the eggs.
  5. Combine the egg mixture with the flour mixture.
  6. Form dough into two balls, wrap and refrigerate for 1 hour.
  7. Line a baking sheet with greased waxed paper.
  8. Preheat oven to 350 degrees F.
  9. Remove dough balls from refrigerator.
  10. Make each ball into a 12x2" log.
  11. Place on prepared cookie sheet.
  12. Bake for 40 minutes OR until they test done.
  13. Remove from oven.
  14. Cool five minutes.
  15. Reduce oven heat to 325 degrees F.
  16. Cut logs 3/4" wide on the diagonal.
  17. Return to oven for about 20 minutes, until dry.
