Mushroom Pecan Stuffing

- 1 pound pecan pieces shopping list
- 3 Tab. olive oil shopping list
- 3 Tab. butter shopping list
- 3 medium onions, coarsely chopped (approx. 3 cups) shopping list
- 1 bunch leeks, chopped (approx 2 cups) shopping list
- 1 pound white mushrooms sliced shopping list
- 1 (10oz.) box currants shopping list
- 1 (16oz) bag herb stuffing mix shopping list
- (and whatever the stuffing mix calls for) shopping list
How to make it
- Heat oven to 350*.
- Spread pecan pieces on pan and bake 6-8 minutes, till toasted and fragrant
- In large skillet over medium high heat, heat oil and butter until hot. Add onions and cook, stirring occasionally. 5 minutes or till translucent
- Add mushrooms and cook, stirring occasionally, 6-8 minutes or until lightly browned.
- Add leeks and cook, stirring occasionally, 3-5 minutes until limp
- In large bowl stir pecans, muchroom mixture, currants and stuffing mix. Add butter and liquid to mixture according to package directions on the stuffing mix
- Ready to serve, stuff in bird or transfer to casserole and heat in oven until hot and crisped on top
