Winter Squash Apple and Orange Soup

- 2tsp olive oil shopping list
- 2tsp unsalted butter shopping list
- 2 shallots,chopped shopping list
- 1 butternut squash,peeled,and coarsely chopped shopping list
- 4c chicken broth shopping list
- salt and pepper to taste shopping list
- juice of one orange shopping list
- 1tsp finely grated fresh ginger shopping list
- freshly grated nutmeg shopping list
- paper-thin apple slices for garnish shopping list
How to make it
- In large pot,heat oil and butter;saute the shallots for about 3 mins.or until translucent. Add the chopped squash and apples,stir 2 to 3 mins. and pour in chicken broth.
- Bring to a boil;reduce heat to med-low,partially cover,and simmer until apples and squash are tender and falling apart,about 35 to 40 mins.
- Puree the mixture in blender or food processor,in batches,if necessary,until very smoth. Return to pan and add salt and pepper.
- Just before serving,warm the soup over low heat,then stir in the orange juice and heat through. Add the ginger and nutmeg,adjusting the flavor to suit you; garnish and serve.
