Not being much of a tomato sauce fan, this is one of my favorite dishes as the pasta absorbs much of the sauce while baking. If you want it saucier, just add more in the preparation.

Ingredients
  • 1 pound pasta, your choice
  • 3/4 pound sausage, uncased and cut into 1/2" pieces
  • 3 cups marinara sauce (or more, if desired)
  • 16 ounces ricotta cheese
  • 8 ounces Mozzarella cheese, shredded
  • 1/4 cup dried parsley, crushed
  • 1/4 cup dried basil, crushed
  • 1 large egg, beaten
  • 1 teaspoon salt
  • 1/4 cup Parmesan cheese, grated

Directions
  1. Cook pasta.
  2. In the meantime, saute sausage until browned.
  3. Mix together the ricotta, Mozzarella, parsley, basil and salt.
  4. Drain pasta.
  5. Pour pasta back into its cooking pot.
  6. Stir in the sausage and the ricotta mixture.
  7. Mix well.
  8. Pour mixture into 13x9x2 baking dish.
  9. Sprinkle with Parmesan cheese.
  10. Bake, covered, for 15 minutes.
  11. Uncover and bake 10 to 15 minutes more.
