this dish replace our traditional ham & pork roll, the bacon imparts a rich wonderful flavor to the meatloaf.

Ingredients
  • 1 egg beaten, 3/4 cup fresh milk, 11/2 to 2 tspoon salt, dash f pepper, 1 cup soft white bread cubed, 1 medium onion minced,3/4 kg ground beef, 1/4 kg groundpork, 8 strips of bacon

Directions
  1. preheat oven to 350F. in a large bowl combine egg,milk,salt,pepper and bread. add onion & ground meats, mix well. line a loaf pan w/ bacon strips across the width of the pan. pack the meat mixture firmly into the pan and bake for 11/2 hrs, remove fr oven. loosen the meatloaf fr the pan carefully running a knife or spatula arround the edges, turn the pan over on a baking sheet and gently shake out the meatloaf..raise the oven temperature to 450F & return meatloaf to oven for another 10 minutes to brown the bacon. slice and u can serve with gravy made fr drippings.
