Macaroni Ham Casserole Recipe
This is my fall-back ham recipe. Fast, easy, and the kids like it.

Ingredients
  • 8 oz macaroni
  • 1 cup diced ham
  • 1/4 cup bell pepper, chopped
  • 1/4 cup onion, chopped
  • 1 T butter
  • 1 T pimiento (optional)
  • 1 can (14 oz) cream of mushroom OR cream of chicken soup
  • 1/2 cup milk
  • 1 T chopped or dried parsley
  • 1/2 cup cheddar cheese, shredded

Directions
  1. Heat oven to 350°.
  2. Put pasta water on to boil.
  3. In a skillet, heat butter, then saute the pepper and onion for about 5 minutes.
  4. Add ham and continue cooking until heated through.
  5. Drop macaroni & cook until 1 notch less than tender, drain.
  6. Combine all ingredients except cheese in a greased casserole dish.
  7. Bake for approx. 30 minutes, until bubbly.
  8. Sprinkle cheese over the top & bake 5 minutes more.
