Queen Helene is the name my father used when he wasn't all that happy with my mother. Her given name was Helen. I only assume that he felt Helene was much more "royal" sounding!

Ingredients
  • 8 cooking apples
  • 1/2 cup raisins
  • 1/4 teaspoons cinnamon
  • 1/4 teaspoon nutmeg
  • 1 cup white sugar
  • 1 cup water

Directions
  1. Preheat oven to 360 degrees F.
  2. Wash and core the apples.
  3. Peel apples about 2/3 way down from stem, leaving skin on bottom 1/3.
  4. Place apples in a shallow baking pan.
  5. Toss raisins with nutmeg.
  6. Put raisins inside the apples.
  7. Combine the sugar, cinnamon and water.
  8. Bring to a boil for 5 minutes.
  9. Pour liquid over apples in pan.
  10. Bake for 45 to 60 minutes, basting often until apples are soft.

This is so great. I call my wife The Queen all the time, because I think she is and I love her for it! She also loves baked apples~ which I am not fond of~ so this is a nice recipe I will make for her. Thank you so much for sharing it :)
