Spinach Salad with Clementines

Spinach salad is a favorite thing and is always good with fruit. Clementines are seasonal starting in November so its the perfect time of year to fix a light lunch or dinner with these little gems.
Ingredients
- 6 cups baby spinach leaves shopping list
- 12 clementines, sectioned shopping list
- 1/2 cup walnut or pecan pieces shopping list
- 1 bunch green onions, sliced crosswise (optional) shopping list
- 1/2 cup sliced water chestnuts (optional) shopping list
- For the dressing: shopping list
- 3 tablespoons olive oil shopping list
- juice of two limes or lemons (about 1/4 cup) shopping list
- 1 tablespoon Dijon mustard (optional) shopping list
How to make it
- Place the salad ingredients in a bowl. Stir the dressing ingredients together and toss with the salad.
