Ingredients

How to make it

  • Add the dry ingredients to the cup and stir together.
  • Stir in the egg, water, oil and extract of choice.
  • Microwave for 3 minutes (1000 watts).
  • The cake should rise to the top of the mug.
  • Allow to cool a little and turn out onto a plate.
  • This would actually serve 2-4 easily, but if you want to indulge and eat it all, I won't tell.

    This was good, however a bit too "eggy" for my likings. May try it again tomorrow though with a bit less egg and more sugar. Other than that, well done

    Just made this and although it was a bit "spongey", considering the ease and quickness of preparation, it was quite good. I may try using cake flour, (which contains less gluten), next time. Also may shorten the cooking time a bit. Of course that will vary depending on the wattage of one's microwave.

    Sound so good. Though I would use self-rising flour and leave out the baking powder. Can't wait to try it out wth my grandchildren.

    Success! Thanks. I ended up cooking (convection/not microwave) for 30 minutes at 350 F. Perfect for two of us to have a strawberry shortcake dessert. Since it is a yellow cake, it will be very versatile, I'm sure. Thank you again for posting.

    Thanks! I am avoiding microwaves presently, but mixed this up for a spin in my convection oven in one of those small oven-able bowls. Needed a quick yellow cake for two...this came to my attention via mommyluvs2cook's comments. Still in the oven, but I just have a feeling it's going to be a "go to" for our berry dessert nights!
