Middle Eastern Vegetable Grain Burgers

- 1/3 cup uncooked, dried lentils, sorted & rinsed shopping list
- 1/4 cup uncooked brown or basmati rice shopping list
- 1 T EVOO shopping list
- 1 lb. fresh mushrooms, sliced shopping list
- 1 medium onion, chopped shopping list
- 3/4 cup grated Parmesan shopping list
- 3/4 cup walnuts, chopped shopping list
- 1/4 cup fresh cilantro shopping list
- 2 lg. eggs shopping list
- 1/2 t black pepper shopping list
- 6 toasted sesame seed buns or toasted pita halves shopping list
- plain yogurt shopping list
- Sliced red onion shopping list
- Shredded lettuce shopping list
- Sliced tomatoes shopping list
How to make it
- Place lentils in medium saucepan; cover with 1-inch water.
- Bring to boil; reduce heat to low & simmer, covered for 25-35 minutes until tender.
- Rinse; drain & set aside.
- MEANWHILE - cook rice according to package instructions; set aside.
- Heat oil in large skillet over medium heat. Add mushrooms & onion; cook & stir 20-25 minutes until mushrooms are brown.
- Combine mushroom mixture, cheese, walnuts, lentils, rice, cilantro, eggs & pepper in large bowl; mix well, cover & chill.
- Preheat broiler.
- Spray 15 X 10-inch jelly-roll pan with cooking spray.
- Shape lentil mixture into 6 1/2-inch thick patties. Arrange patties on prepared pan.
- Broil 4 inches from heat 3-4 minutes each side or until golden brown, turning once.
- Serve on buns/pitas with yogurt, red onion, lettuce tomatoes or whatever condiments you'd like.
