Easy Carrot Pumpkin Snack Cake Recipe

Ingredients
  • 1/2 cup butter or margarine
  • 1 (14 oz) pkg.quick pumpkin bread mix
  • 1 cup shredded carrot
  • 1/3 cup chopped walnuts
  • 1 egg
  • 1/2 (12 oz) can cream cheese frosting

Directions
  1. Preheat oven to 350*F Grease and flour 8X8X2 baking pan
  2. In medium-large microwave safe bowl, micro butter on high for 40 seconds or just until melted. Add Quick bread mix, carrot, walnut and egg. Mix well. ( dough will be stiff) Spread into prepared pan.
  3. Bake 30-35 minutes or until top spring back when you lightly touch it. Cool completely and spread frosting.
  4. ( Refrigerate remaining frosting for another use later)
