Tuscan Chicken Skillet

- 4 small bonesless skinless chcken breast halves (1 pound) shopping list
- 4 ounces cream cheese, cubed shopping list
- 1/4 water shopping list
- 1/4 cup pesto shopping list
- 2 cups grape OR cherry tomatoes shopping list
- 1 cup Italian cheese blend shopping list
How to make it
- Heat large nonstick skillet coated with cooking spray over medium-high heat.
- Add chickn.
- Cover.
- Cook chicken 5 to 7 minutes on a side OR until cooked through.
- Remove from skillet.
- Keep chicken warm.
- Reduce heat to medium.
- Add cream cheese, water, pesto and tomatoes to skillet.
- Cook, stirring occasionally, until heated through (about 2 minutes).
- Return chicken to skillet.
- Cook and stir for 1 minute OR until chicken is coated and heated through.
- Sprinkle with shredded cheese.
- **I would probably cover the pan at this point to melt the cheese although the recipe doesn't say to do that.
