Again, from kraftfoods.com This is another that might be okay using "cubed" chicken, in my opinion.

Ingredients
  • 4 small bonesless skinless chcken breast halves (1 pound)
  • 4 ounces cream cheese, cubed
  • 1/4 water
  • 1/4 cup pesto
  • 2 cups grape OR cherry tomatoes
  • 1 cup Italian cheese blend

Directions
  1. Heat large nonstick skillet coated with cooking spray over medium-high heat.
  2. Add chickn.
  3. Cover.
  4. Cook chicken 5 to 7 minutes on a side OR until cooked through.
  5. Remove from skillet.
  6. Keep chicken warm.
  7. Reduce heat to medium.
  8. Add cream cheese, water, pesto and tomatoes to skillet.
  9. Cook, stirring occasionally, until heated through (about 2 minutes).
  10. Return chicken to skillet.
  11. Cook and stir for 1 minute OR until chicken is coated and heated through.
  12. Sprinkle with shredded cheese.
  13. **I would probably cover the pan at this point to melt the cheese although the recipe doesn't say to do that.
