How to make it

  • Heat oven to 375
  • Cut pears in half lengthwise, core center at seeds, remove stem area Rub pears with a cut lemon to prevent browning
  • Mix together cheese, cranberries and walnuts
  • Fill pear core with mixture and pile slightly high
  • Place in a baking dish, slightly crowding
  • Mix together apple juice, brandy and honey
  • Pour over pears into baking dish
  • Bake for 30 minutes
  • Prepare the mixed greens and sprinkle with Kosher salt. Whisk together lemon juice, 1/4 c baking liquid and olive oil. Top the greens with dressing and a roasted pear half.
  • Enjoy!

    I adapted this recipe from Barefoot Contessa Back to Basics cookbook. The original called for 3 T of Port and 1/3 c of brown sugar; I used brandy and honey instead.
    The mixed greens were an alternative as well. The original called for baby arugula.
