This dish sets the dinner mood. Pears stiffed with cranberries, walnuts and Bleu cheese. So fancy but so easy. Barefoot Contessa recipe.

Ingredients
  • 3 Anjou pears
  • 3 lemons, juiced
  • 3 oz Bleu cheese
  • 1/4 c dried cranberries
  • 1/4 c toasted walnuts then chopped
  • 1/2 c apple juice
  • 1 T brandy
  • 2 T honey
  • 1/4 c extra virgin olive oil
  • mixed greens (spinach, butternut and leaf)
  • Kosher salt

Directions
  1. Heat oven to 375
  2. Cut pears in half lengthwise, core center at seeds, remove stem area Rub pears with a cut lemon to prevent browning
  3. Mix together cheese, cranberries and walnuts
  4. Fill pear core with mixture and pile slightly high
  5. Place in a baking dish, slightly crowding
  6. Mix together apple juice, brandy and honey
  7. Pour over pears into baking dish
  8. Bake for 30 minutes
  9. Prepare the mixed greens and sprinkle with Kosher salt. Whisk together lemon juice, 1/4 c baking liquid and olive oil. Top the greens with dressing and a roasted pear half.
  10. Enjoy!

I adapted this recipe from Barefoot Contessa Back to Basics cookbook. The original called for 3 T of Port and 1/3 c of brown sugar; I used brandy and honey instead.
The mixed greens were an alternative as well. The original called for baby arugula.
