Roasted Pears with Bleu Cheese

- 3 Anjou pears shopping list
- 3 lemons, juiced shopping list
- 3 oz Bleu cheese shopping list
- 1/4 c dried cranberries shopping list
- 1/4 c toasted walnuts then chopped shopping list
- 1/2 c apple juice shopping list
- 1 T brandy shopping list
- 2 T honey shopping list
- 1/4 c extra virgin olive oil shopping list
- mixed greens (spinach, butternut and leaf) shopping list
- kosher salt shopping list
How to make it
- Heat oven to 375
- Cut pears in half lengthwise, core center at seeds, remove stem area Rub pears with a cut lemon to prevent browning
- Mix together cheese, cranberries and walnuts
- Fill pear core with mixture and pile slightly high
- Place in a baking dish, slightly crowding
- Mix together apple juice, brandy and honey
- Pour over pears into baking dish
- Bake for 30 minutes
- Prepare the mixed greens and sprinkle with Kosher salt. Whisk together lemon juice, 1/4 c baking liquid and olive oil. Top the greens with dressing and a roasted pear half.
