Ingredients
  • 1/2 cup flour
  • 1/4 cup unsweetened cocoa powder
  • 4 tsps instant espresso
  • 1 tsp baking powder
  • 1/8 tsp salt
  • 4 tbsp unsalted butter, room temp
  • 2/3 cup packed brown sugar
  • 1 large egg
  • 1/4 cup semi sweet or bittersweet chocolate, melted and cooled
  • 1 tbsp milk
  • 1/2 cup powdered sugar

Directions
  1. Whisk together flour, espresso, cocoa powder, baking powder, and salt
  2. In separate bowl, beat brown sugar and butter until light and fluffy
  3. Beat in egg
  4. Mix in cooled, melted chocolate
  5. Slowly beat in dry mixture
  6. Stir in milk until well blended
  7. Chill dough in freezer at least 45 minutes
  8. Preheat oven to 350
  9. Remove dough and form into 1 inch balls, if necessary refreeze for 10 minutes or so in order to firm up
  10. Roll dough balls in powdered sugar and place on baking sheet
  11. Bake for 12-14 minutes, rotating baking sheet halfway through
