Italian Chicken Mozzarella Melt

- 4 boneless skinless chicken breast halves shopping list
- 2 tablespoons olive oil shopping list
- 1/4 teaspoon salt shopping list
- 1/2 teaspoon dried oregano divided shopping list
- 1 cup pizza sauce shopping list
- 1/2 teaspoon dried basil shopping list
- 4 French rolls halved and toasted shopping list
- 1 small zucchini shredded shopping list
- 1/4 cup shredded mozzarella cheese shopping list
- 1/4 cup grated parmesan cheese shopping list
How to make it
- Brush each piece of chicken with olive oil then sprinkle with salt and 1/4 teaspoon oregano.
- Cook chicken in lightly greased nonstick skillet over medium high heat 4 minutes on each side.
- Set chicken aside then combine pizza sauce, basil, and remaining oregano in skillet,
- Cook over medium high heat until thoroughly heated then remove from heat and add chicken.
- Spread rolls on a baking sheet and spread sauce evenly on bottom half of each roll.
- Top evenly with chicken, zucchini and cheeses then broil 3” from heat for 3 minutes.
- Cover with tops of rolls and serve.
