Bourbon Chicken With Apricots

- 4 chicken breast halves shopping list
- 1/2 teaspoon salt shopping list
- 1/8 teaspoon freshly ground pepper shopping list
- 2 tablespoons butter shopping list
- 1 large white onion diced shopping list
- 1 teaspoon paprika shopping list
- 1-1/2 cups chopped green onions shopping list
- 1/2 cup orange juice shopping list
- 2 tablespoons bourbon shopping list
- 1 cup fresh apricots chopped shopping list
- 1/8 teaspoon ground nutmeg shopping list
How to make it
- Sprinkle chicken with salt and pepper then arrange in rectangular baking dish and set aside.
- Melt butter in skillet over medium heat then add diced onion to skillet and sauté 5 minutes.
- Stir in paprika then set aside 1 tablespoon green onions and stir remaining green onions into mix.
- Cook stirring occasionally 4 minutes.
- Spread onion mixture evenly over chicken then drizzle with orange juice and bourbon.
- Bake at 400 for 50 minutes turning and basting occasionally with pan drippings.
- Top with chopped apricots and sprinkle with nutmeg then bake 5 minute more.
- Transfer chicken to a serving dish and drizzle with pan drippings and sprinkle with green onions.
