Grilled Shrimp With Citrus Salsa

- 2 oranges shopping list
- 2 peaches shopping list
- 1 jalapeno pepper minced shopping list
- 2 tablespoons purple onion minced shopping list
- 1 clove garlic minced shopping list
- 1 teaspoon fresh rosemary chopped shopping list
- 1 tablespoon olive oil shopping list
- 1-1/2 pounds medium shrimp shopping list
- 1 cup fresh orange juice shopping list
- 1 tablespoon olive oil shopping list
- 1 bunch fresh rosemary stemmed shopping list
- 5 cloves garlic pressed shopping list
- 1/4 teaspoon freshly ground black pepper shopping list
- vegetable cooking spray shopping list
How to make it
- Grate rind from orange reserving grated rind.
- Peel section and coarsely chop oranges then peel and chop peaches.
- Stir together 2 tablespoons grated rind, chopped orange, peach, jalapeno and next 4 ingredients.
- Cover and chill then peel shrimp.
- Combine remaining orange rind, orange juice, and next 4 ingredients in a shallow dish.
- Add shrimp the cover and chill turning shrimp occasionally for 30 minutes.
- Remove shrimp from marinade reserving marinade.
- Bring marinade to a boil over high heat then boil 1 minute and set aside.
- Grill shrimp in basket coated with spray covered with grill lid over medium 5 minutes per side.
- Baste with reserved marinade then serve with citrus salsa.
