Ingredients
  • 2 oranges
  • 2 peaches
  • 1 jalapeno pepper minced
  • 2 tablespoons purple onion minced
  • 1 clove garlic minced
  • 1 teaspoon fresh rosemary chopped
  • 1 tablespoon olive oil
  • 1-1/2 pounds medium shrimp
  • 1 cup fresh orange juice
  • 1 tablespoon olive oil
  • 1 bunch fresh rosemary stemmed
  • 5 cloves garlic pressed
  • 1/4 teaspoon freshly ground black pepper
  • Vegetable cooking spray

Directions
  1. Grate rind from orange reserving grated rind.
  2. Peel section and coarsely chop oranges then peel and chop peaches.
  3. Stir together 2 tablespoons grated rind, chopped orange, peach, jalapeno and next 4 ingredients.
  4. Cover and chill then peel shrimp.
  5. Combine remaining orange rind, orange juice, and next 4 ingredients in a shallow dish.
  6. Add shrimp the cover and chill turning shrimp occasionally for 30 minutes.
  7. Remove shrimp from marinade reserving marinade.
  8. Bring marinade to a boil over high heat then boil 1 minute and set aside.
  9. Grill shrimp in basket coated with spray covered with grill lid over medium 5 minutes per side.
  10. Baste with reserved marinade then serve with citrus salsa.

I like the way the citrus salsa sounds... after I give it a try I'll let you know how I liked it. Love shrimp on the barby - I can never have enough of that! High-five!
