My grandmother, believe it or not, used to do something similar to this for our New Year Eve get togethers when I was a kid. Hated it then, sounds diving now! Go figure ~ ~ ~ Courtesy of right@home.com

Ingredients
  • 1 pound red seedless grapes, rinsed and stemmed
  • 1 tablespoon extra-virgin olive oil
  • 2 teaspoons fresh thyme leaves OR 1 teaspoon dried
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground pepper
  • 1 tablespoon honey

Directions
  1. Preheat oven to 400 degrees F.
  2. In large bowl OR gallon size storage bag (my choice!), gently mix grapes with the olive oil, thyme, salt and pepper.
  3. Arrange the grapes on a large baking sheet in a single layer.
  4. Don't crowd the grapes.
  5. Bake, shaking pan occasionally until the grape skins begin to split, about 15 to 18 minutes.
  6. Remove grapes from oven.
  7. Drizzle with honey.
  8. Serve immediately OR let stand at room temperature.
  9. **Wait for midnight and eat the grapes for some Italian good luck in the New Year!
