Lemon-thyme Pork Chops Recipe
This is so easy, delicious, tender and lemony! I used the George Foreman Indoor grill and it cooks in minutes!

Ingredients
  • 1 pkg Butterflied pork chops (about 1/2 - 1"inch thick)
  • 1/4 cup EVOO
  • 1-2 tsp kosher salt
  • about 1 Tbs fresh or dried thyme
  • 1/2 tsp pepper
  • zest of one lemon
  • juice of 1 lemon
  • Zip lock bag

Directions
  1. Combine all ingredients in zip lock bag.
  2. Marinate in refrigerator 12 hours or overnight, massage pork, occasionally
  3. Remove pork from baggie, and cook 4-5 minutes on Foreman grill.
  4. Discard remaining marinade (or bring marinade to a boil in saucepan and cook 3-4 minutes and pour over cooked meat.)
  5. Let meat sit for 2-3 minutes before cutting into it, or all of the juices will run out.
  6. I served it over rice
  7. You can also cook in skillet or outdoor grill....cooking times will vary
