How to make it

  • Pie:
  • Combine apples,sugar,cognac,lemon peel,lemon juice,and spices.
  • Place in a9x1-1/2" round baking dish.
  • Dot with butter.
  • On lightly floured surface roll pastry to a 10" circle.
  • Fit over apple mixture,turn edges under,fluting edge to seal it to pan.
  • Combine egg yolk and milk.
  • Brush over top of pastry.
  • Sprinkle with a little cinnamon.
  • Prick holes in top of crust with a fork to allow steam to escape.
  • Bake in a 425 degree oven for 15 minutes.
  • Reduce oven to 350 degree and continue baking for 45 minutes or till pastry is a nice golden brown.
  • Pie Crust:
  • In mixing bowl combine flour and salt,cut in butter and shortening,tell mixture resembles fine crumbs.
  • Combine egg yolk and water,gradually add to flour mixture.
  • Using fingers,knead lightly to form a ball.
  • Cover and refrigerate about 1 hour.
