  • PIE:
  • 8 Cups Tart,Cooking Apples,peeled,cored and sliced
  • 1 Cup Sugar
  • 4 Tablespoons Cognac
  • 1 teaspoon Lemon Peel,shredded finely
  • 1 Tablespoon Fresh Lemon Juice
  • 1 teaspoon Ground Cinnamon
  • 1/2 teaspoon Ground Nutmeg
  • 1/8 teaspoon Ground Cloves
  • 2 Tablespoons Butter
  • 1 Egg Yolk,beaten
  • 2 Tablespoon Milk
  • RECIPE FOR PIE CRUST:
  • 3/4 Cup Flour
  • 1-1/2 teaspoon Salt
  • 1-1/4 Cups Butter,chilled and cut in small pieces
  • 1/3 Cup Shortening
  • 1 Beaten Egg Yolk
  • 1/2 Cup Ice Water

Directions
  1. Pie:
  2. Combine apples,sugar,cognac,lemon peel,lemon juice,and spices.
  3. Place in a9x1-1/2" round baking dish.
  4. Dot with butter.
  5. On lightly floured surface roll pastry to a 10" circle.
  6. Fit over apple mixture,turn edges under,fluting edge to seal it to pan.
  7. Combine egg yolk and milk.
  8. Brush over top of pastry.
  9. Sprinkle with a little cinnamon.
  10. Prick holes in top of crust with a fork to allow steam to escape.
  11. Bake in a 425 degree oven for 15 minutes.
  12. Reduce oven to 350 degree and continue baking for 45 minutes or till pastry is a nice golden brown.
  13. Pie Crust:
  14. In mixing bowl combine flour and salt,cut in butter and shortening,tell mixture resembles fine crumbs.
  15. Combine egg yolk and water,gradually add to flour mixture.
  16. Using fingers,knead lightly to form a ball.
  17. Cover and refrigerate about 1 hour.
