Deep Dish Apple Pie

- PIE: shopping list
- 8 Cups Tart,cooking apples,peeled,cored and sliced shopping list
- 1 Cup sugar shopping list
- 4 Tablespoons cognac shopping list
- 1 teaspoon lemon peel,shredded finely shopping list
- 1 Tablespoon Fresh lemon juice shopping list
- 1 teaspoon ground cinnamon shopping list
- 1/2 teaspoon ground nutmeg shopping list
- 1/8 teaspoon ground cloves shopping list
- 2 Tablespoons butter shopping list
- 1 egg yolk,beaten shopping list
- 2 Tablespoon milk shopping list
- RECIPE FOR PIE CRUST: shopping list
- 3/4 Cup flour shopping list
- 1-1/2 teaspoon salt shopping list
- 1-1/4 Cups butter,chilled and cut in small pieces shopping list
- 1/3 Cup shortening shopping list
- 1 Beaten egg yolk shopping list
- 1/2 Cup ice water shopping list
How to make it
- Pie:
- Combine apples,sugar,cognac,lemon peel,lemon juice,and spices.
- Place in a9x1-1/2" round baking dish.
- Dot with butter.
- On lightly floured surface roll pastry to a 10" circle.
- Fit over apple mixture,turn edges under,fluting edge to seal it to pan.
- Combine egg yolk and milk.
- Brush over top of pastry.
- Sprinkle with a little cinnamon.
- Prick holes in top of crust with a fork to allow steam to escape.
- Bake in a 425 degree oven for 15 minutes.
- Reduce oven to 350 degree and continue baking for 45 minutes or till pastry is a nice golden brown.
- Pie Crust:
- In mixing bowl combine flour and salt,cut in butter and shortening,tell mixture resembles fine crumbs.
- Combine egg yolk and water,gradually add to flour mixture.
- Using fingers,knead lightly to form a ball.
- Cover and refrigerate about 1 hour.
