Apple Cinnamon Cheesecake

- 1/2 cup plus 1 tablespoon butter, softened and divided shopping list
- 1/4 cup firmly packed light brown sugar shopping list
- 1 cup all-purpose flour shopping list
- 1/4 cup quick-cooking oats shopping list
- 1/4 cup walnuts, finely chopped shopping list
- 1/2 teaspoon ground cinnamon shopping list
- 16 ounces cream cheese, room temperature shopping list
- 14 ounce can Eagle Brand sweetened condensed milk shopping list
- 3 large eggs shopping list
- 1/2 cup frozen apple juice concentrate, thawed shopping list
- 2 medium apples (your choice), cored and sliced shopping list
- cinnamon apple glaze (recipe follows): shopping list
- 1/4 cup frozen apple juice concentrate, thawed shopping list
- 1 teaspoon cornstarch shopping list
- 1/4 teaspoon ground cinnamon shopping list
How to make it
- Preheat oven to 300 degrees F.
- Beat together 1/2 cup butter and sugar until fluffy.
- Add flour, oats, walnuts and cinnamon.
- Mix well.
- Press firmly onto the bottom and a little up sides of a 9" springform pan.
- Bake 10 minutes.
- In large bowl, beat cream cheese until fluffy.
- Gradually beat in the condensed milk until smooth.
- Add eggs and apple juice concentrate.
- Mix well.
- Pour batter into prepared crust.
- Bake for 45 minutes OR until center springs back when lightly touched.
- Remove from oven.
- Cool.
- In a large skillet, cook apple slices in remaining 1 tablespoon of butter until tender-crisp.
- Arrange apple slices on top of cheesecake in concentric circles.
- Drizzle with Cinnamon Apple glaze.
- Chill.
- Store leftovers covered in refrigerator.
- GLAZE:
- In small saucepan, combine 1/4 cup frozen apple juice concentrate, 1 teaspoon cornstarch and 1/4 teaspoon cinnamon.
- Mix well.
- Cook over low heat, stirring, until thickened.
- Makes about 1/4 cup.
