How to make it

  • Preheat oven to 350 *F Coat a 10 cupcake pan with non-stick spray.
  • Cut a 1/2 chunk out of the 10 pineapple slices. Place 1 slice into each cup to form a ring ( not the 1/2 chunk)
  • In small sauce pan melt 1/2 cup of butter, brown sugar and corn syrup.Stir to combine. Cook over low heat for 5 minutes or until slightly think. Spoon of 1 tsp mixture over each pineapple ring.
  • Using electric mixer, in medium bowl mix 1/4 cup of butter and sugar beat until fluffy. Add egg and coconut extract, mix . Add baking powder, mix in flour and pineapple juice, mix well.
  • Pour 1/3 to 1/2 cup of batter over each pineapple slice, bake 20 minutes . Cool 20 minutes in pan, then invert cupcakes to cool.

    You could add a maraschino cherry to the center of the pineapple ring before baking...
