Pineapple Upside Down Cupcakes

- 1 very ripe pineapple, peeled, cored, cut into thin rings shopping list
- Could use (20 oz ) pineapple rings shopping list
- 1/4 cup butter shopping list
- 1/4 cup light brown sugar shopping list
- 1 tbsp. light corn syrup shopping list
- 1/4 cup butter, room temp shopping list
- 1/4 cup sugar shopping list
- 1 egg, room temperature shopping list
- 1 tsp. coconut extract shopping list
- 1 1/2 tsp. baking powder shopping list
- 1 cup flour shopping list
- 1/2 cup pineapple juice shopping list
How to make it
- Preheat oven to 350 *F Coat a 10 cupcake pan with non-stick spray.
- Cut a 1/2 chunk out of the 10 pineapple slices. Place 1 slice into each cup to form a ring ( not the 1/2 chunk)
- In small sauce pan melt 1/2 cup of butter, brown sugar and corn syrup.Stir to combine. Cook over low heat for 5 minutes or until slightly think. Spoon of 1 tsp mixture over each pineapple ring.
- Using electric mixer, in medium bowl mix 1/4 cup of butter and sugar beat until fluffy. Add egg and coconut extract, mix . Add baking powder, mix in flour and pineapple juice, mix well.
- Pour 1/3 to 1/2 cup of batter over each pineapple slice, bake 20 minutes . Cool 20 minutes in pan, then invert cupcakes to cool.
