Parsnip Potato Celeriac Carrot And Sunchoke Cheesy Bake Recipe

Ingredients
  • 3 yellow potatoes, cubed
  • 3 sunchokes, sliced with skin on
  • 3 carrots, sliced
  • 3 parsnips, sliced
  • 1 celeriac, peeled and cubed
  • 1 1/2 tsp garlic powder
  • 3 tbls butter
  • 1/2 c parmesan cheese
  • 1/2 can of evaporated milk or 3/4 c cream
  • 1 tsp winter savory or sage
  • salt and pepper to taste

Directions
  1. Add all ingredients in baking dish.
  2. Bake at 375 degrees F for an hour or until tender (depending on how large your veggies are).
  3. Can save 1/4 c parmesan cheese on top for last 15 minutes of baking or add all at beginning.
