How to make it

  • Sift flour and cocoa together
  • Cream the butter and sugar together for 2 minutes
  • Add vanilla and salt, beat until smooth
  • Add flour mixture, mix on low speed until soft dough forms
  • Chill dough for about 40 minutes
  • Heat oven to 350. Line baking sheets with parchment
  • Roll dough into inch balls, place on baking sheet, press centers with thumb to make indention.
  • Bake one sheet at a time for 8 to 9 minutes
  • Melt chocolate and butter over a double boiler until smooth and shiny
  • Cool slightly and spoon or pipe into center of each cookie.
  • Note: after melting chocolate, any extract flavoring (1/4 tsp) could be added
