Khao Pad Bai Kraprow Recipe
KHAO PAD BAI KRAPROW This is a recipe I obtained from an estate sale. I obtained it when I purchased the family collection from the Crawford Estate in Irving, Texas in 1982.

Ingredients
  • 2 tablespoons vegetable oil
  • 1/4 teaspoon salt
  • 2 garlic cloves minced
  • 2 small serrano chilies seeded and chopped
  • 1/4 pound shrimp peeled and deveined
  • 4 cups cold cooked long grain white rice crushed gently to break up any clumps
  • 1 tablespoon soy sauce
  • 1 tablespoon fish sauce
  • 1/4 teaspoon sugar
  • 2 green onions white and green portions chopped
  • 1/2 cup fresh Thai basil leaves firmly packed
  • 1/4 cup coarsely chopped fresh cilantro

Directions
  1. Heat a wok over medium high heat then when hot add oil, salt and garlic.
  2. Stir fry until garlic is golden about 30 seconds.
  3. Add chilies and shrimp then stir fry until shrimp just turn pink about 30 seconds.
  4. Add rice and stir fry until heated through about 3 minutes.
  5. Add soy sauce, fish sauce and sugar then stir fry to combine thoroughly.
  6. Add green onions and basil leaves then stir fry until leaves begin to wilt about 30 seconds.
  7. Transfer rice to a serving bowl or platter and garnish with cilantro then serve immediately.
