New Zealand Rice

- 4 tablespoons butter shopping list
- 1 small white onion chopped shopping list
- 1 cup long grain rice shopping list
- 1-1/2 cups chicken stock shopping list
- 1 teaspoon salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
- 1/4 cup raisins shopping list
- 1/4 cup slivered almonds shopping list
How to make it
- Melt 3 tablespoons butter in casserole then add onion and cook until golden.
- Stir in raw rice and cook three minutes then add stock and season with salt and pepper.
- Bring to boil then cover and bake at 375 for 20 minutes adding more stock if necessary.
- Combine remaining butter; currants and almonds then pour over rice just before serving.
