How to make it

  • Melt 3 tablespoons butter in casserole then add onion and cook until golden.
  • Stir in raw rice and cook three minutes then add stock and season with salt and pepper.
  • Bring to boil then cover and bake at 375 for 20 minutes adding more stock if necessary.
  • Combine remaining butter; currants and almonds then pour over rice just before serving.
