Egg McMuffin Squares Recipe
This is great for a brunch, and just as good as a 6pm "Oh no what am I going to make for dinner" desperation recipe!

Ingredients
  • 1 pkg reduced-fat crescent rolls (my family likes it better when I use 1 tube refrigerator biscuits - Pillsbury Grands work best because they're thick. Peel off the top half of each to make 2 thinner, full-size biscuits)
  • 1 pkg turkey breakfast sausage, sliced into small pieces
  • 1/2 cup turkey pepperoni (optional)
  • 4 eggs
  • 1/3 cup milk
  • 1/2 cup shredded cheddar cheese
  • pinch of pepper

Directions
  1. Preheat oven to 400°
  2. Roll out the crescent rolls into a lightly-greased 9x13 baking dish.
  3. Press to seal the seams together.
  4. Sprinkle sausage (and pepperoni, if using) over the top.
  5. Lightly beat the eggs with the milk and pepper, and pour over the sausage.
  6. Sprinkle with cheese.
  7. Bake 15 minutes, or until crust is golden brown, the eggs have set, and the cheese is bubbly.
