Spicy Oysters Sausage And Long Beans In Black Bean Sauce Recipe
Any excuse to use oysters! Oysters from the Pacifi meet up with sausage from Italy and long beans from China. But you can be creative. Even hot dogs work.

Ingredients
  • SPICY OYSTERS AND SAUSAGE IN BLACK BEAN SAUCE
  • 1 Qt. Pacific oysters, thoroughly drained
  • 5 spicy sausages (Andouille or spicy Italian) cut in 1’ pieces
  • 1 large onion chopped
  • 1 red and 1 green bell pepper, chopped
  • 1 lb. Chinese long beans, rinsed and cut in 1" lengths
  • 2 tomatoes sliced, and then the slices halved. Remove seeds by rinsing in water.
  • 2 T. walnut or peanut oil
  • 3 T. black bean and garlic sauce
  • 4 oz. chicken broth
  • 1 t. red pepper flakes
  • 2 T. cream sherry mixed with 1 T. corn starch

Directions
  1. Heat the oil in a wok for a minute for a minute on high. Add pepper flakes, onion and sausage. Reduce heat to medium. Stir fry until onions are softening. Add peppers and long beans and stir fry 1 minute additional. Add oysters and tomatoes and stir fry 1 minute. Add black bean and garlic sauce and chicken broth. Cook 1 minute. Add sherry and corn starch, and cook until sauce reaches desired thickness. Serve with rice.
