Ingredients
  • 2 small heads frisée cored and cut into bite-size pieces
  • 1 head endive cored and cut crosswise into strips
  • 1 head radicchio cored and cut crosswise into strips
  • 3 shallots minced
  • 2 tablespoons fresh chives chopped
  • 1/2 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 3 tablespoons extra virgin olive oil
  • 1/2 pound pancetta
  • 3 tablespoons sherry vinegar
  • 2 tablespoons white wine vinegar

Directions
  1. In a large bowl combine the frisée, endive, radicchio, shallots and chives.
  2. Season with salt and pepper and toss with 2 tablespoon of the olive oil then set aside.
  3. Heat a heavy nonstick fry pan over medium-high heat.
  4. Add the pancetta and remaining 1 tablespoon olive oil and cook stirring constantly for 2 minutes. Add half of each type of vinegar and cook for 3 minutes.
  5. Immediately pour the hot pancetta and vinegar over the greens and toss well.
  6. Add the remaining vinegar and serve immediately.
