How to make it

  • In a large bowl combine the frisée, endive, radicchio, shallots and chives.
  • Season with salt and pepper and toss with 2 tablespoon of the olive oil then set aside.
  • Heat a heavy nonstick fry pan over medium-high heat.
  • Add the pancetta and remaining 1 tablespoon olive oil and cook stirring constantly for 2 minutes. Add half of each type of vinegar and cook for 3 minutes.
  • Immediately pour the hot pancetta and vinegar over the greens and toss well.
  • Add the remaining vinegar and serve immediately.
