Frisee Salad with Pancetta

- 2 small heads frisée cored and cut into bite-size pieces shopping list
- 1 head endive cored and cut crosswise into strips shopping list
- 1 head radicchio cored and cut crosswise into strips shopping list
- 3 shallots minced shopping list
- 2 tablespoons fresh chives chopped shopping list
- 1/2 teaspoon salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
- 3 tablespoons extra virgin olive oil shopping list
- 1/2 pound pancetta shopping list
- 3 tablespoons sherry vinegar shopping list
- 2 tablespoons white wine vinegar shopping list
How to make it
- In a large bowl combine the frisée, endive, radicchio, shallots and chives.
- Season with salt and pepper and toss with 2 tablespoon of the olive oil then set aside.
- Heat a heavy nonstick fry pan over medium-high heat.
- Add the pancetta and remaining 1 tablespoon olive oil and cook stirring constantly for 2 minutes. Add half of each type of vinegar and cook for 3 minutes.
- Immediately pour the hot pancetta and vinegar over the greens and toss well.
- Add the remaining vinegar and serve immediately.
