Nut Roast Recipe
A good vegetarian Christmas dinner option

Ingredients
  • 1oz. Butter
  • 1 Large Onion
  • 1/2 lb. Mushrooms
  • Rosemary
  • Mixed Herbs
  • 1 Tbsp Brown Flour
  • 1/2 Can Chopped Tomatoes
  • 1 Tsp Marmite
  • 12 Oz. Cashew Nuts
  • 6Oz. Breadcrumbs
  • 3 Eggs
  • Salt
  • Pepper

Directions
  1. Preheat over to gas mark 4
  2. Melt butter
  3. Finely chop onions and mushrooms
  4. Fry in butter
  5. Add flour to absorb excess fat
  6. Add tomatoes, Marmite, nuts, breadcrumbs, herbs and seasoning
  7. Mix well
  8. Add Eggs
  9. Place into a lined loaf tin then cover with tinfoil
  10. Bake at regulo 4 for 90 minutes
  11. Turn out onto a plate and place a sprig of holly on top
  12. Enjoy
