Ingredients
  • 2- teaspoons olive oil
  • 1/3- cup minced red bell pepper
  • 1/3- cup minced green bell pepper
  • 1/2- teaspoon dried thyme
  • 1- cup all-purpose flour
  • 1/4 - cup whole wheat flour
  • 1 1/2- teaspoons baking powder
  • 1/2- teaspoon baking soda
  • 1/2- teaspoon sugar
  • 1/4- teaspoon ground red pepper
  • 1/8- teaspoon salt
  • 1/3- cup sour cream
  • 1/3 - cup milk
  • 2- tablespoons minced scallions
  • 1/4 - cup grated parmesan cheese
  • non-stick cooking spray

Directions
  1. Preheat oven to 400 degrees f.
  2. line baking sheets with parchment paper set aside
  3. heat oil in a small skillet, add bell pepers and thyme; cook and stir 5 minutes until tender set aside...........
  4. combine all-purpose flour, whole wheat flour, baking powder, baking soda, sugar, ground red pepper and salt in a mixing bowl..stir well
  5. add sour cream , milk and scallions
  6. mix to form a sticky dough
  7. stir in cheese...do not over mix !!!!!
  8. drop by rounded tablepoonfuls onto prepared baking sheets
  9. spray tops lightly with cooking spray
  10. place in oven and immediately turn oven heat down to 375 degrees f bake 13 to 15 minutes or until golden brown
  11. remove to cool
  12. makes 24
