Cheesy Manicotti

- 1 8oz pkg. sliced mushrooms shopping list
- 2 cloves of garlic minced shopping list
- 3 egg whites shopping list
- 1 pkg. frozen chopped spinach thawed and well drained. shopping list
- 1 15 oz container part skim ricotta cheese shopping list
- 1 cup shredded mozzarella cheese, divided shopping list
- 1/3 cup grated parmesan cheese divided shopping list
- 1 8oz pkg manicotti shells ( 14 shells) cooked and drained shopping list
- 2 cups of spaghetti sauce shopping list
How to make it
- Preheat oven to 350
- Spray large nonstick skillet with cooking spray.
- Add mushrooms and garlic
- cook 5 min on medium heat stirring frequently
- Remove from heat.
- Beat egg whites lightly in medium bowl
- Add mushrooms mixture, spinach, ricotta cheese and half of each of the mozzarella and parmesan cheeses.
- Mix well
- Spoon evenly into manicotti shells
- Place in a 13x9 baking dish sprayed with cooking spray.
- Cover with spaghetti sauce.
- Bake 40 minutes.
- Top with remaining mozzarella and parmesan cheeses and continue to bake 5 min longer until cheese is melted.
- serves 7, 2 shells each.
- can substitute cottage cheese instead of ricotta
