I got this from a Kraft Foods, magazine,, tried and loved it,, its easy, colorful and freezes well too!

Ingredients
  • 1 8oz pkg. sliced mushrooms
  • 2 cloves of garlic minced
  • 3 egg whites
  • 1 pkg. frozen chopped spinach thawed and well drained.
  • 1 15 oz container part skim ricotta cheese
  • 1 cup shredded mozzarella cheese, divided
  • 1/3 cup grated parmesan cheese divided
  • 1 8oz pkg manicotti shells ( 14 shells) cooked and drained
  • 2 cups of spaghetti sauce

Directions
  1. Preheat oven to 350
  2. Spray large nonstick skillet with cooking spray.
  3. Add mushrooms and garlic
  4. cook 5 min on medium heat stirring frequently
  5. Remove from heat.
  6. Beat egg whites lightly in medium bowl
  7. Add mushrooms mixture, spinach, ricotta cheese and half of each of the mozzarella and parmesan cheeses.
  8. Mix well
  9. Spoon evenly into manicotti shells
  10. Place in a 13x9 baking dish sprayed with cooking spray.
  11. Cover with spaghetti sauce.
  12. Bake 40 minutes.
  13. Top with remaining mozzarella and parmesan cheeses and continue to bake 5 min longer until cheese is melted.
  14. serves 7, 2 shells each.
  15. can substitute cottage cheese instead of ricotta
