How to make it

  • Trim tops off heads of garlic and place each one on a square of foil.
  • Drizzle with oil and wrap in foil then bake at 425 for 30 minutes.
  • Set aside to cool.
  • Boil potatoes until tender then drain and transfer to a large mixing bowl.
  • Add butter, salt, pepper and enough milk to get the consistency you like.
  • Beat with electric mixer until fluffy.
  • Squeeze cloves of garlic from peels and beat into potatoes.
