Ingredients
  • 2 tbs peanut oil or unsalted butter
  • 4 large ripe bananas, peeled and sliced 1/2 inch thick
  • 1 medium onion, finely chopped (about 1/2 cup)
  • 1/2 cup chopped green pepper
  • 1/2 cup chopped red pepper
  • 1/2 cup chopped celery
  • 2 scallions, trimmed and sliced (white and green parts)
  • 2 tsp minced garlic
  • 1/2 small fresh Scotch bonnet pepper or 1 jalapeno pepper, minced
  • Salt

Directions
  1. Heat 1 tbs of oil in a large skillet over high heat. Add the bananas and saute until golden brown, turning frequently. Transfer to plate and set aside.
  2. Heat the remaining oil over medium heat Add the onions, bell peppers, celery, scallions, and garlic and saute until soft, about 2 min.
  3. Add the bananas and chile pepper to the skillet. Cook gently for 2-3 minutes over low heat, stirring frequently. Season to taste with salt and serve at once.
