Ingredients

YAM PUDDING

3 ½ cups grated uncooked yams or sweet potatoes (about 2 pounds)

I ¼ cups milk

½ cup light corn syrup

3 eggs, beaten

2 TBS. margarine or butter, softened

½ cup packed brown sugar

1 tsp. ground cinnamon

½ tsp. salt

½ tsp. ground nutmeg

Cream or ice cream

Directions

Preheat oven to 325.

Grease square baking dish, 8x8x2 inches.

In a mixing bowl combine all ingredients except cream; pour into dish.

Bake until a knife inserted halfway between center and edge comes out clean, about 1 hour. Serve warm with cream or ice cream.
