This is a Betty Crocker recipe that I thought some of you may enjoy. If you make it please let me know what you think. It sounded good to me.

Ingredients
- YAM PUDDING
- 3 ½ cups grated uncooked yams or sweet potatoes (about 2 pounds)
- I ¼ cups milk
- ½ cup light corn syrup
- 3 eggs, beaten
- 2 TBS. margarine or butter, softened
- ½ cup packed brown sugar
- 1 tsp. ground cinnamon
- ½ tsp. salt
- ½ tsp. ground nutmeg
- Cream or ice cream
Directions
- Preheat oven to 325.
- Grease square baking dish, 8x8x2 inches.
- In a mixing bowl combine all ingredients except cream; pour into dish.
- Bake until a knife inserted halfway between center and edge comes out clean, about 1 hour. Serve warm with cream or ice cream.
