Now Bring Us Some Figgy Pudding

- 1 C shortening - butter can be substituted shopping list
- 1 C sugar shopping list
- 1 egg shopping list
- 1 tsp vanilla shopping list
- 1 C milk shopping list
- 2 C flour shopping list
- 4 tsp baking powder shopping list
- 1/8 tsp salt shopping list
- 1 1/2 C Chopped figs shopping list
How to make it
- Sift dry ingredients together - set aside.
- Add 3 - 4 inches of water to a large pot and set on flame to get hot.
- Cream shortening.
- Add sugar slowly, beating in well.
- Add egg and vanilla, mix well.
- Add sifted dry ingredients alternately with milk.
- Add figs.
- Pour into well greased and floured pudding mold or bundt pan.
- Cover tightly with clean tea towel and tie around the rim with cord.
- Gather corners of cloth toward top center of pan and fasten with pin - this will make it easier to remove the pan from the pot later and keep the towel from sitting in the water which can make the top of the pudding soggy.
- Carefully lower pan into pot with water in it - make sure the water only comes up about halfway on the pan. Remove excess if necessary.
- Steam for 2 hours - check water level occasionally just to make sure it doesn't go dry. IMPORTANT NOTE - Do NOT let water boil.

- Serve with "Bird's" custard prepared according to package instructions.

- Tip for tying cord - Since the pudding mold is tapered, tie the cord slightly lower than you want it so that when you gather the corners of the towel the cord "rolls" up a little higher. This will ensure a snug fit around the rim of the mold.
