How to make it

  • Have your ma come over and put a big 12" cast iron skillet on the stove and put in about a 1/2" layer of vegetable oil. turn the stove on medium heat and let the oil heat up.
  • onto a plate mix a combination of 1 cup flour to 1/2 cup cornmeal.
  • wash the chicken pieces with running water and then dredge in the flour mixture. place into the hot oil in the skillet. it should sizzle slightly when it hits then oil. if it doesnt the oil probably isnt hot enough yet. but it it spatters all over, its too hot, turn it down. your ma will know. do this until you fill the pan.
  • cook on the first side 20 minutes or until golden brown. turn the pieces over. when hungry people come into the kitchen your ma will give them a job to do, such as making the salad or peeling potatoes.
  • meanwhile mix the flour and cornmeal at a ratio of 2 to 1 as before. place finished chicken pieces on a plate lined with a paper towel. (chicken is cooked when a cooking thermometer is inserted into the thickest part and reaches an internal temperature of 165 degrees for 2 minutes). continue frying the remaining chicken pieces adding oil to the skillet as needed.
