Beef Casserole Recipe
I'm sure a lot of you have your favourite stew and this is mine which seems to taste different every time I cook it, but is a classic comfort family food.

Ingredients
  • 750g stewing beef
  • 250ml stock (beef or veg is best)
  • 2 carrots (sliced)
  • 1 onion
  • 1 clove garlic
  • 50g mushrooms (quartered)
  • half bottle of red wine
  • 2 tablespoons flour
  • Herbs - whatever you've got

Directions
  1. Soften the onion in a thick bottomed casserole dish/pan with the garlic
  2. Add the beef and brown over a medium-high heat
  3. Add the flour and cook off for 2 minutes
  4. Gradually add half the stock and mix with the flour
  5. Add the mushrooms and carrots and wine
  6. Add some herbs - thyme, oregano work well
  7. Bring to the boil and add the rest of the stock if it looks a little dry
  8. Place in a preheated oven at 175 degrees for 3 hours or until the beef is falling apart.
  9. Check regullarly to avoid drying out
  10. Seson to taste
