How to make it

  • Soften the onion in a thick bottomed casserole dish/pan with the garlic
  • Add the beef and brown over a medium-high heat
  • Add the flour and cook off for 2 minutes
  • Gradually add half the stock and mix with the flour
  • Add the mushrooms and carrots and wine
  • Add some herbs - thyme, oregano work well
  • Bring to the boil and add the rest of the stock if it looks a little dry
  • Place in a preheated oven at 175 degrees for 3 hours or until the beef is falling apart.
  • Check regullarly to avoid drying out
  • Seson to taste
