Ingredients
  • 1 lb boneless, skinless turkey breast cutlets, cut into 2 inch pieces
  • 2 cloves Garlic, minced
  • 1 (10 oz) package Mushrooms, halved
  • 1 medium zucchini, halved and cut into 1/2 inch slices
  • 1 (14.5 oz can) unsalted diced tomatoes with juice
  • 1/2 tsp sea salt
  • 1/2 tsp freshly ground Black Pepper
  • 1/2 tsp thyme
  • 1/2 tsp oregano

Directions
  1. Heat a large non-stick skillet on medium, spray with olive oil spray.
  2. Cut turkey into 2 inch cubes, add turkey to pan and brown for 2 - 3 minutes.
  3. Flip turkey cubes, and add the minced garlic, halved mushrooms, sliced zucchini, tomatoes, salt and spices.
  4. Saute for 5 minutes, stirring once or twice so the meat is browned on top and the veggies begin to sizzle.
  5. Cover with a lid, and simmer for 10 to 12 minutes.
