Turkey Ragout

- 1 lb boneless, skinless turkey breast cutlets, cut into 2 inch pieces shopping list
- 2 cloves garlic, minced shopping list
- 1 (10 oz) package mushrooms, halved shopping list
- 1 medium zucchini, halved and cut into 1/2 inch slices shopping list
- 1 (14.5 oz can) unsalted diced tomatoes with juice shopping list
- 1/2 tsp sea salt shopping list
- 1/2 tsp freshly ground black pepper shopping list
- 1/2 tsp thyme shopping list
- 1/2 tsp oregano shopping list
How to make it
- Heat a large non-stick skillet on medium, spray with olive oil spray.
- Cut turkey into 2 inch cubes, add turkey to pan and brown for 2 - 3 minutes.
- Flip turkey cubes, and add the minced garlic, halved mushrooms, sliced zucchini, tomatoes, salt and spices.
- Saute for 5 minutes, stirring once or twice so the meat is browned on top and the veggies begin to sizzle.
- Cover with a lid, and simmer for 10 to 12 minutes.
